LM2 3.0 running super cold on the highway mid trip

Hi everyone, I traded my 2020 diesel for a 2022 limited AT4. I always found my 2020 would warm up hot on the highway and settle around 100* varying very little. 
 

Today on a 4 hour round trip on the highway at 50-65mph (90-110km/h) I noticed my temperature falling and falling to the point it was almost at cold start temperature.  It stayed so low for like 20 minutes until I stepped on it to pass someone and the oil pressure jumped up and shortly after the temperature went back to normal operating. 
 

don’t know why it would start running so cold. Anyone have any ideas?

I wonder if there is something like snow / ice keeping the grill shutters open?
