Besides options and luxury are the Customs vs The LTs vs the LTZs vs the High Country any different when it comes to towing and tow capacities and capabilities??

Towing it depends but payload is a definite yes.  A Custom typically will have higher payload than an LT, which would be higher than LTZ which would be same or higher than High Country.

If the highest payload and GVWR on any of those trims is your goal, get 18" or 20" wheels.  17" wheels will cut capacity and GVWR.

Conventional trailer hitch towing on crew cabs with 18" and 20" wheel trucks and the diesel can do 18,500lbs vs 14,500lbs for all other diesel and all gas trucks with any wheel size.

There is no change on conventional towing on trims but gooseneck can reduce on the higher trims.  Depending on options, higher trims can be 500 lbs higher than work truck.

You can get tires up to 4080lbs in 18" or 20".  18" tires cost less and the larger sidewall give a smoother ride.
