Hey there. Bit of a longer post, I apologize now.
I have a 2019 GMC Sierra Elevation with 11,000km. It’s brand new.. been on the road almost 6 months now and been towed into the dealership 3 separate times. First two were for the same issues (vehicle not starting) and this third time was due to a ruptured oil cooler line on the highway. I lost my oil, cage was at zero, temperature was basically maxed if not maxed by the time I shut it down. Had a warning on screen to turn vehicle off, oil had sprayed everywhere as there was grey smoke coming from engine where it was burning. 
Towed it to dealership.. dealership calls me within 3 hrs saying “the oil cooler line is fixed, we filled it with oil, guys are cleaning up the truck as there was oil everywhere, you can come get it in an hour.” 
I spoke with a mechanic who said once you lose oil like that chances are great the engine is damaged and also prematurely worn.. and this dealership never even checked the engine. Upon asking they are giving me a song and dance that it is a lot of labour to check it and they need permission from warranty first blah blah. 
 

Has anyone dealt with an issue like this before?

My mechanic outside of the dealership says the engine needs to be replaced but in the end they should just replace my truck. I’ve missed 3 shifts of work the past 5 months (potentially more if I couldn’t borrow others vehicles as I live in the country and work in the city). feeling this vehicle is a lemon and not reliable at this point.

If it didn't lose enough oil, and made no noises after they changed the lines and put oil back in it, there is no reason to "check the engine".  GM isn't going to authorize a teardown if there is no reason to suspect engine failure.

Should've let her seize on the highway.  Now this will be bothering you and you'll have to trade her off at a loss.  

When I bought my truck a year ago and saw this whole issue unfold in a few threads, I always told myself if it ever happened to me- I would let it fry. That had to be the way to go. Under warranty anyway.
