I 'll update mine:

I was inthe same boat, nothing was working and after the first incident it happened again, this time going 60+ in evening commute on a 4 lane highway and of course i was on the left lane.

The truck just cut off, lights and all, i had to coast to the right lane and my 2 yr old was in the truck. Scary situation.

What fixed the issue for me was me adding a ground cable from NEG battery to the ground bolt next to the brake booster. This basically gives you a second ground cable and no issues since.

So my 2014 just started doing this as well. While driving about 2plus hours the dash lights and stereo began to flicker then went out briefly then went back on. Then my headlights began to flicker and dim. Stopped at a friends house and after a few minutes my car truck would not start back up. It’s a 2014 silverado.

Change your battery if it's the original one. Mine lasted 3yr. Check your body to engine grounds. I added another ground from neg battery to the firewall.

i would say you have a dying battery ...use your scan tool to data log the battery , with everything on , hot and load the steering full lock.  you can also drive the truck for 10 minutes in tow haul mode this increases the charge rate voltage to the battery from the Alt.  you next xmas present https://www.mechman.com/alternators/cadillac/escalade/6-2l/2014-2018/high-output-370-amp-black-billet-alternator-for-14-18-gm-silverado-sierra-suburban-tahoe-escalade/

is your idle at 500rpm or lower?  i get light surging sometimes but no stalling,  my 6.0 and 5.3 trucks are at 500 rpm , i feel this is a bit too low, should be 650rpm 750 with all lights on and AC and steeering wheel full lock, , might have to get a tuner to bump this up .

My 2018 Silverado Z71 Crew would stall after a long highway run, in front of my house when backing into driveway. Steering wheel would pull out of my hand, radio would change stations, dash display would change from INFO to radio/audio and sometimes would get the "roll down then up drivers window" message.

Didn't feel like taking dashboard apart, but did check the battery connections. All red/Positive connections were tight as can be, BUT the NEGATIVE BATTERY Connection was so loose, could spin the cable on the post with little effort. After tightening the neg battery clamp, haven't had the issue since (looking for wood to knock on)

Hope everyone else's problem is this simple. Good luck to everyone!

2014 GMC Sierra with same issue. So far has been in a parking lot and turning right at a green light. Took it to a GMC service center. They replaced the alternator because they said it was putting out “too much” power. That a thing? Never heard of it. $1600 for diagnostics and replacement (which is including the extended warranty “coverage”).
Well it’s been 2 weeks and it did it again. So I spent $1600 AT A GMC SERVICE CENTER to accomplish zero and put this safety hazard back on the road. Unhappy is a bit of an understatement. If you want something done right… go to the forums and figure it out yourself, I guess.

Maybe with a bad alternator? But, as you mentioned, I've never heard of that, as well.
I swapped my alternator which, stock, is 150 Amps, with a 250 Amp Mechman alternator, no issues and faster charging on my 2 mile daily to work and home drives.
Doesn't seem to be putting out "too much power." The charging system only requests what it needs. A little extra doesn't hurt but I have a lot of additions and the old 150 Amp alternator (though still perfectly fine) just wasn't keeping up on these daily short drives. (battery tested etc, etc.)
Regarding the main topic, I have no experience in that as I have never encountered such.
