Just go into the settings on your phone and tell it not to connect to the truck. Unsure what type of phone you have, but on my iPhone, if I click the I button on the connection, it takes me to another screen where I can click forget this connection.

That would be the easiest for me, because I am unaware if you can actually disable the wifi network in the truck.

You could also try pushing the onstar button and call them and ask it to cancel. They set mine up so they should be able to turn it off. I just disabled mine on my phone app last night though.
