4.3L Running slightly hot/heats up on acceleration?

I have a '16 Silverado with the 4.3L. The engine normally runs at around 210 degrees (needle straight up, which I know I shouldn't care about per se). With my last truck, a '15 Colorado with the 2.5L I4, the engine ran with the needle slightly to the left of 12 o'clock and it ran at about 200-205 degrees. Other vehicles I have had experience with, mainly Chryslers (including Dodge/Ram trucks), also ran "significantly" cooler than 210 degrees. Also, upon open acceleration, the temperature is supposed to stay the same or get cooler as air is rushing past the motor. When I accelerate hard in the Silverado, I notice the needle move forward a hair before returning to the center position. Is this an issue? Possibly due to the thicker 5W30 synthetic that my dealer put in at the last oil change?

210 is normal for these engines. I noticed the same thing happening while towing with my 6.2l. The lead tech at my dealer said the transmission cooler, and radiator are linked. Under hard acceleration, it could be the higher line pressure in the transmission lines raising the temperature temporarily. Again just what the tech told me.
