I also hate any product that make my dash shiny, so I use Meguiar's Quik interior detailer, leaves a nice matt finish, can be found in almost every auto parts store.

I started using Adam's Polishes just over a year ago. A few of their products are officially licensed by GM. I'm a fan of their Total Interior Detailer, it leaves a matte finish and provides UV protection.
